The Chef
Chef Thapa left Kathmandu at nineteen for the tandoor lines of Mumbai, where he spent a decade learning what fire does to spice — and what discipline does to instinct. He arrived in Dallas with two knives and a notebook of his grandmother's recipes, written in her hand.
At Saffron, those recipes are cooked exactly as she intended — only sharper. Achar fermented in-house for weeks. Dal finished at the pass, never held. Nothing softened for anyone. This is the food of his childhood, served at the precision of a tasting counter.
